Homemade Fettuccine pasta with pesto chicken & cream sauce

So i wanted to make pad Thai and I ended up making Italian pasta ,
I never did Chinese or Thai food ,

So today I wanted to make a change and try another recipe for the pasta dough ,,
I always use flour and egg .

Pasta dough recipe :
2 cups semolina flour
3 egg
Olive oil

Chicken recipe :
2 chicken breast
1/4 cup olive oil
1 tsp basil pesto
Salt & pepper

Pasta sauce :

1/4 butter
1/2 cup heavy cream
fresh parsley
Parmesan cheese
Salt & pepper

Mango macaroons

Know that I can make macaroon
Am trying to create new flavors , summer flavor " mango macaroon"

ingredients :

60 ml egg whites
35 g sugar

150 g sugar
50 ml water

150 almond
150 powder sugar
60 ml egg whites

Yellow + orange food coloring
Filled with :

Mango juice

Butter cream

Chocolate cheese cake

Cooked cheese cake my favorite ,, although it takes ages to bake then to cool ,,
I have made this chocolate cheesecake from hummingbird recipe book,, yesterday and know it's time to be served ,,

Ingredients :
900 g cream cheese
4 egg
190 g sugar
200 g melted dark chocolate

For the biscuits :
200 g digestive biscuits
2 tbs coco powder
150 g melted butter

From sweet to salty

Lately I have been baking sweets ,,
So yesterday i decided to pamper my family and make them dinner ,,

Italian food
I decided to make pizza , ravioli and garlic bread,,

First I starting making the pizza dough ,,
I acutely like to make pizza using focaccia dough ,

Focaccia dough recipe
2 cups flour
1 cup warm water
1/4 parmesan cheese
1/2 tsp salt
2 tbs olive oil
1 fried onion
Dried hot chili
Mixed herbs

Topped with mushroom , slice tomato , olive oil , salt & pepper , mixed herbs,and last mazorilla cheese

Second garlic bread:
Got the idea from my sister
Same Focaccia bread dough
Topped with
50 g butter
2 mashed garlic
1/4 cup Parmesan cheese
and parsley

last spinach ravioli

Pasta dough :
2 cup flour
3 eggs

filling :
Parmesan cheese
Salt & pepper

Topping :
Mixed herbs
& last sprinkle some Parmesan cheese on top

MAY baking ..

Pistachio loaf
Again hummingbird recipe book <3

Ingredients :
190 g butter
190 g sugar
3 eggs
190 g flour
100 g pistachio
25 ml sour cream
1 tsp bp
1/4 tsp salt
Vanilla essence

Topping :
Rose water
Powder sugar

Washy's birthday cake
Lemon flavor
It was a challenge doing this cake in tis weather the frosting keeps melting when an trying to frost the cake ,, thanks god it was successful cake and it was ready on time as I planned ,,

Cardamom loaf

I love hummingbird recipe book ,, it my favorite <3 ,,
2days recipe is cardamom loaf pg. 194 in hummingbirds cake days recipe book ,,
I don't like how loaf takes so long to bake and it turn out ugly -_- not as cute as frosted cupcakes
But it tastes as good as cupcake
Loaf is a good choice for those who hates frosting like dad ,,

Recipe :
190 g butter
190 g sugar
3 egg
190 g flour
1 tsp bp
10 cardamom ( I used 2 tsp of cardamom powder )
1/4 tsp salt
Vanilla essence
25 ml sour cream ( I used yogurt Instead )

I added almond slice and topped it with
sugar ,saffron and water

Raspberry Macaroon ,,
For a whi,e know I have been trying to find a yummy recipe for the macaroon filling ..
I just don't get it that it's a butter cream ,,
I did chocolate macaroon and filled it with chocolate ganache it so delitious ,, I'll be doing it soon nagaoka and post some images and the recipe...
I keep trying to take images of process on me baking, and I always forget ,,

Yaa it seems a lot but I burn couple of trys

Smooth cake frosting !!

So today I had buttercream workshop ,,
where I learn useful technique in
In making buttercream frosting ,,
how to frost cake and pipe the frosting ,,
I really enjoyed the class ,

And one more thing ,, finally I get to know how to cut the cake into straight equal layers ,,

the best part of the workshop
I get to take my cake home with me ,,



I haven't updated my blog for a while ..
But I still bake as a daily mission ,,
I believe that home interior is not enough to accomplish coziness ,welcomeness and pleasant

5meer cupcakes

The challenge that I have started to bake cupcakes inspired by local Emirate desserts,

"ka-meer" 5meer cupcakes
Ka-meer is a traditional kind of bread Here in UAE ,
It's one of the most non bread we have in this region..
"ka-meer" is mainly made from flour , egg and it's sweetened by dates and the top is wiped with egg so it turns glossy and brown ,,
"ka-meer" is cooked using special gadgets on charcoal.
Throw years changes have been made to the "ka-meer" but it still have it's flavor and importance as a break fast , special occasions and even dinner ..

Next is the new edition of "ka-meer" that I have developed to be a cupcake ..
Frosted with cream cheese and honey ..

Balalee6 cupcakes

Cupcake # 2

This cupcake is part of ( A lovely flavor brought from past to present )
The challenge that I have started to bake cupcakes inspired by local Emirate desserts,

Cupcake batter :

60 g butter
150 g sugar
1 egg
150 g self raising flour
1/2 baking soda
1tbs cardamon
Pinch of Salt

120 ml milk
100 g balalee6 cooked for 1 min in hot water

Preheat oven to 180C and line cupcake pan with paper - set aside.
After Cooking the short Vermicelli , "" balalee6 pour the milk and the saffron ,so it dose't dry and stick together .
Cupcake batter
Whisk butter with sugar until smooth then add egg ,
Mix together the dry ingredients flour , baking soda , cardamon and salt.
add the dry ingredients to the mixture ,
Add the milk " balalee6 " to the rest of ingredients and mix it with a spatulas
.. Pour into the prepared cupcake pan and bake for about 15 minutes or until golden all over and feels firm to touch. Let cool on a wire racks then add butter cream frosting ..

Raspberry Chocolate cuppies

I started doing this chocolate cupcakes from the hummingbird cooking book ,
is so delicious.
I wanted to add my touch to the cupcakes mix in the rich chocolaty flavor the the sourness of raspberries is a perfect match that a person can't have enough ,,
Raspberries are placed in the middle of each cupcake and chocolate ganache is made for the topping .

Ingredients :

40 g butter
140 g sugar
1 egg
100 g self raising flour
20 g dark chocolate powder
1tsp baking soda
Vanilla extract
120 ml fresh milk

Chocolate ganache Topping
Around 125 ml wiping cream
300 g dark chocolate
1tbs light corn syrup

5bee9 cupcakes " khabees cupcakes"

Am starting a challenge to bake cupcakes inspired by local Emirate desserts,

This cupcake flavor is inspired by a traditional dish in UAE called Khabees
It has many variation .. One is made out of semolina, saffron & cardamon as main ingredient ,,

Ingredients :

60 g butter
140 g sugar
1 egg
100g samolina
50 g self raising flour
120 milk
1 tsp cardamon
1 tsp baking soda


100 butter
300 powder sugar
30 ml milk

The cupcake taste delirious as it looks .
am so glad that i did , and thanks to bro for this challenge idea ..
Wait for my next cupcake that will bring memories back ,,

After my graduation i start spending lots of my time cooking . i start experiencing with different ingredients and different recipes . It remind me that cooking was always my passion since my childhood . i first start cooking when am was 10 years old, my mum was always engorging and teaching me. now cooking is my escape from reality , i cook when am happy , i cook when am sad i cook when am stressed and i cook when am calm . i always challenge myself with more complicated recipe. i started with cupcakes, cookies to pancakes , macaroons and waffles i also like making pizza and pasta from scratch.
i cook from an exist recipe ,
add my touch to some recipe
And start from scratch with others ,
